Keto Bacon Chicken Alfredo Casserole

This Bacon Chicken Alfredo casserole is perfect for a Sunday night dinner. 
It’s pretty rich and higher in calories so I recommend eating a smaller portion and pairing it with a side salad.

Alfredo Sauce Ingredients

Other Casserole Ingredients

  • * 5 cups cooked chicken breast, cubed
  • * 2 cups shredded mozzarella cheese
  • * 1/4 cup grated parmesan cheese
  • * 2 cups fresh spinach, rinsed and chopped
  • * 3/4 cup sliced baby Bella mushrooms
  • * 6 slices of cooked bacon, chopped


How to Make the Alfredo Sauce?

* Add butter, heavy whipping cream, and cream cheese to a pan over medium heat. Whisk until melted and combined.

* Add minced garlic, garlic powder, Italian seasoning, salt, and pepper. Whisk until smooth. Then, add parmesan cheese.

* Bring to a simmer and cook for 3-5 minutes. Remove from heat and set aside.

How to Make the Casserole?

* Preheat oven to 375.

* To a large casserole dish add 5 cups of cooked, cubed chicken breast.

* Top with half of the cooked bacon, mushrooms, and chopped spinach then spread the Alfredo sauce over. Sprinkle mozzarella and finish with remaining bacon.

* Bake in oven on the center rack for 25-30 minutes.
