Keto-Berry Lasagna made with graham crackers




Keto-Berry Lasagna made with graham crackers  no nuts involved 

Ingredients:



graham crackers (recipe below)




  • 1/2 cup butter, melted
  • 1/2 cup butter, softened
  • 1 cup Swerve confectioner's sweetener
  • 8 oz Philadelphia cream cheese, softened
  • 1 cup whipped cream
  • 1 cup fresh blueberries
  • 3 oz sugarfree strawberry jello
  • 1/2 cup boiling water
  • 1 cup Two Good strawberry yogurt
  • 2 cups whipped cream


▪Pulse graham crackers in food processor until sandy texture. (Reserve 1/2 cup for topping) Mix with melted butter and press into a 9x13 casserole dish. Chill
▪Cream butter, cream cheese, and sugar until fluffy. Add whipped cream. Fold in blueberries. Spread on crust and chill
▪Dissolve jello in boiling water. Remove from heat, then add yogurt and mix until combined. Mix in whipped cream. Spread on top of chilled dessert
▪Finish with the reserved 1/2 cup crushed grahams and a few blueberries. Cover and chill until ready to serve

▪(To make your own whipped cream - combine 3 cups heavy cream, 1 1/2 tsp vanilla, and 3 Tbsp monkfruit sweetener. Whisk on high speed until stiff peaks form)


Perfectly sweet and refreshing! For a huge slice ~ it's under 6 net carbs! .

Keto Graham Crackers:




  • 2 cups almond flour 
  • 1/3 cup golden sweetener
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • pinch of salt
  • 1 egg
  • 2 Tbsp butter, melted
  • 1 tsp vanilla


Whisk together dry ingredients. Mix in butter, egg, and vanilla until ball of dough forms. Roll out between two pieces of parchment paper to 1/4 inch thickness. Using a sharp knife, cut into squares. Bake at 300° for 25 minutes. Cool for 30 minutes then break apart along lines. Space apart on the cookie sheet. Turn off oven and place grahams inside to continue crisping up. I usually leave mine overnight.
