After a touch of experimenting this is often my keto Brioche bread. I'm planning on making it into buns next time. It's absolutely delicious! I've based it on Deidre's low carb bread, so it's low carb but not gluten-free. Just be aware if you have digestive issues with gluten you need to avoid it or just have in moderation. 
It's so easy in the bread maker, and you could even add s/f dark chocolate (haven't tried that so not sure how it would go) or a tiny amount of unsweetened dried fruit for a sweeter loaf. 
Mine turned out so huge again I had trouble slicing it, & had to cut each piece in half to fit into the toaster.

To make the Brioche add to the breadmaker in this order:

  • 1.5 tbsp active yeast
  • 1 cup of warm water
  • 1 tsp honey (no carb as the yeast eats the honey)
  • 3 slightly beaten eggs (room temp)
  • 100g softened butter
  • 1 cup vital wheat gluten
  • 1 cup almond flour
  • 1/2 cup oat fiber
  • 5 tbsp erythritol or whatever sweetener you prefer (& depends on your taste)
  • 1/2 tsp xanthan gum
  • 1/2 tsp salt


Set it to a Basic bread setting, (mine does a 3-hour rapid loaf or 4 hours normal - I've tried both and they're equally as good).
Your house will smell amazing!. 
Let it cool before cutting. It's nice as is or even better toasted so you get a crispy flakey crust

So if you get 17 slices it's about 2g net carb/slice.
