KETO CHEDDAR JALAPEÑO BAGELS

Cheddar Jalapeño Bagels |
For us, part of the fun of being keto is re-creating all our favorite foods in a healthier way. These Jalapeño bagels are the perfect example.
MAKES: 6 bagels (1 per serving) PREP TIME: 10 minutes COOK TIME: 18 minutes
Ingredients :
- 2 jalapeño peppers
- 3 scoops unflavored whey protein powder
- 1½ teaspoons baking powder
- ¾ teaspoon garlic powder
- ¾ teaspoon onion powder
- ½ teaspoon pink Himalayan salt
- 5 ounces cream cheese (10 tablespoons), room temperature
- ¼ cup (½ stick) unsalted butter, room temperature
- 1 large egg, room temperature
- ¾ cup shredded cheddar cheese (about 3 ounces), divided
- Cream cheese, for serving (optional)
Special equipment:
6-well silicone donut pan
Instructions :
1. Preheat the oven to 350°F and grease a 6-well silicone donut pan with coconut oil spray.2. Mince one of the jalapeño peppers and slice the other crosswise into rounds.
3. Put the protein powder, baking powder, garlic powder, onion powder, and salt in a medium-sized bowl and mix well with a fork.
4. Put the cream cheese, butter, and egg in a large bowl and cream with a hand mixer until there are no clumps.
Add the dry ingredients and continue to mix with the hand mixer until a thick batter has formed.
5. Add ¼ cup of the shredded cheese and the minced jalapeño to the batter and fold in with a rubber spatula.
6. Evenly distribute the batter among the greased wells of the donut pan, filling them nearly to the top.
Top with the remaining 1/2 cup of shredded cheese and the jalapeño slices. Bake for 18 minutes, or until a toothpick inserted in the center of a bagel comes out clean.
7. Allow to cool in the pan for 10 minutes before removing. To serve, slice in half and spread with cream cheese, if desired.
8. Store leftovers in the refrigerator for up to a week.
