    This is one of my most favorite flavor combinations and the variation in texture of these bars makes for an absolutely perfect little keto treat!!! These Strawberry Cheesecake Cookie Bars are creamy, chewy and have a little crunch from that white chocolate drizzle on top.

    Ingredients 


    • 1.5 C almond flour
    • 1/3 c stevia/erythritol blend
    • 1/2 tsp baking soda
    • 1/4 tsp salt
    • 1/4c melted butter
    • 1 large egg
    • 1/2 tsp vanilla extract
    • 1/2tsp almond extract.


    Instructions 

    Combine dry ingredients in bowl. Stir in butter, egg, and extracts. 
    Reserve 1/3 of dough for topping. Press the rest into bottom of 8x8 pan.

    Make cheesecake layer by mixing —8oz softened cream cheese, 1/2 C sweetener(I used stevia/erythritol blend) and one egg until smooth. Add cream cheese layer on top of cookie layer.

    Spread 1/2C SF strawberry jam over cream cheese mixture— I made mine own in a pot by cooking down 1C diced strawberries with 2 Tbsp sweetener and adding 1/4 tsp xantham gum to thicken at the end. 

    Top with chunks of the reserved dough. Bake at 350 for 30-35 minutes. Cool and then drizzle with melted (choczero) white chips. 
    Refrigerate for at least 4 hours.
