Keto Ube Leche Mug Cake |
This Ube Leche Mug Cake is my “next level” vanilla mug cake recipe, just used ube extract instead of vanilla.

Ingredients:
Ube leche mug cake
- 2T almond flour
- 1T lupin flour (or more almond flour)
- 1/2T sweetener
- 1/4tsp baking powder
- 1T heavy cream
- 1T melted cacao butter
- 1 egg white (2T)
- Drops of ube extract
Ube leche
- 2T heavy cream
- 1T sweetener
- Drop of ube extract
- Small pinch of xanthan gum (optional)
Instructions :
1. Mix all dry ingredients in a small bowl2. In another bowl, melt cacao butter. Let cool for a little and add cream, egg whites and ube extract. Mix well.
3. Combine wet ingredients with dry.
4. Divide the mixture in 2 greased ramekins.
5. Microwave for 60-90sec (or until cooked)
6. Allow to cool for at least 2min before transferring to a plate.
7. Make ube leche: In a small saucepan, add cream and sweetener. Whisk together until smooth. Add ube extract.
8. Transfer one cake on a plate, poke top with a fork and pour 2 tsp ube leche. Top with coconut icing (just thickened cream with coconut extract or you can also use whipped coconut cream)
9. Add second cake. Pour remaining ube leche on top of the cake. Let cool in the fridge for 10min (just to let it set)
10. Decorate with remaining coconut icing and serve.
Tip:
-Lupin flour improves the texture. In this recipe, you can use all Almond flour if you don't have lupin.
-Whipped Cream with coconut extract. You can also whip chilled coconut cream.
-Got the extract from an Asian grocery.
