Recipe makes 9 cookies.



  • 100g almond flour
  • 30g coconut flour
  • 2 tbsp erythritol
  • 1/2 tsp. xanthan gum
  • 1 tsp baking powder
  • 1 tsp dark cocoa
  • 2 tbsp gingerbread spice
  • 1 tsp vanilla extract
  • 50g butter
  • 1 egg


  • 200g mascarpone cheese
  • 1 tsp cinnamon
  • 1 tbsp erythritol


Preheat oven to 330F. In a large bowl, mix almond flour, coconut flour, xanthan gum, baking powder, dark cocoa, and gingerbread spice. 
In a small pot, melt butter, erythritol and vanilla extract. Remove and let it cool. Once cooled, whisk in one egg and mix together with the dry mixture until it forms a dough. Wrap in foil and refrigerate for at least an hour. 
Remove from the fridge, and roll between two sheets of parchment paper until they're about 1/4 inch thick. 
Use cookie cutters or the rim of the glass to cut out shapes, then place on parchment paper. 
Bake for about 15-20 minutes. Remove from the oven, and let it cool completely.

Beat together mascarpone, erythritol, and cinnamon until uniform. 
Add about one teaspoon between two, cooled down cookies.
