This delicious Low Carb keto blueberry cheesecake is a gluten-free, sugar-free dessert. It’s rich, creamy texture will have you thinking you’ve cheated on a keto diet.

How to make a Keto Blueberry Cheesecake

Recipe Makes: 8 servings
Ingredients

▪️Crust:


  • 150g almond flour
  • 50g melted butter


▪️Cheesecake:


  • 350g cream cheese
  • 100ml heavy cream
  • 2 eggs
  • 2 tbsp coconut flour
  • 50g erythritol


▪️Glaze:


  • 100g blueberries
  • 20g erythritol
  • 20g butter


Instructions:

  1. Preheat oven to 160C/325F. 
  2. In a bowl, mix together almond flour and melted butter until it sticks together forming a ball. 
  3. Distribute evenly in a silicone tart pan (press it) and make holes with a fork. Bake for 15 minutes and set aside. 
  4. In another bowl, use a hand mixer to mix all the ingredients for the cheesecake together until uniform. Fill in the crust. Bake for one hour, then cool down completely to prevent breaking. 
  5. In a small saucepan, add all glaze ingredients and bring to boil. 
  6. Top the cheesecake and enjoy it.
