How to make a Keto Cake Pops⁣⁣⁣

INGREDIENTS: ⁣⁣⁣

⁣⁣⁣CAKE: ⁣⁣⁣

  •  1 cup Swervesweetie ⁣⁣⁣
  •  3/4 cup butter (softened)⁣⁣⁣
  •  8 large Egg⁣⁣⁣
  •  1/2 cup unsweetened hemp milk⁣⁣⁣
  •  1 tbsp Vanilla extract⁣⁣⁣
  •  3 cups Blanched almond flour⁣⁣⁣
  •  1/2 cup Coconut flour⁣⁣⁣
  •  1 1/2 tbsp Gluten-free baking powder⁣⁣⁣

CAKE BINDER:⁣⁣⁣

  • 3tbs Cream Cheese⁣⁣⁣
  • 3tbs heavy whipped cream
  • 1tbs Swervesweetie confectioners ⁣⁣⁣

INSTRUCTIONS: ⁣⁣⁣

1) Bake the Cake: ⁣⁣⁣
⁣⁣⁣
Preheat the oven to 350 degrees F. Line the bottom of a pan with parchment paper⁣⁣⁣
⁣⁣⁣
In a large bowl, beat together the erythritol and butter, until fluffy.⁣⁣⁣
⁣⁣⁣
Beat in the eggs, one at a time, then the almond milk and vanilla extract.⁣⁣⁣
⁣⁣⁣
Beat in the almond flour, coconut flour, and gluten-free baking powder.⁣⁣⁣
⁣⁣⁣
Transfer the dough to the lined pan and smooth the top with a spatula. Bake for 35-40 minutes, until the top, is lightly golden and springy.⁣⁣⁣

Let the cake cool completely ⁣⁣⁣
⁣⁣⁣
2) Make the binder ⁣⁣⁣
⁣⁣⁣
With a hand mixer, combine the HWC, cream cheese, and confectioners sweetener until fluffy. ⁣⁣⁣

Crumble up the cake and combine with the cream cheese fluff. ⁣⁣⁣
⁣⁣⁣
Form into balls and stick a cake pop stick in the middle. Refrigerate for 1 hour or freeze for 30 minutes. ⁣⁣⁣

3) Decorate⁣⁣⁣
⁣⁣⁣
Melt the chocolate chips with a little coconut oil until liquid and smooth. Dip the hardened balls in to coat. Add the sprinkles or sugar-free decorations of your choice. ⁣⁣⁣
⁣⁣⁣
Freeze or refrigerate to harden.
