How to make a KETO CHOCOLATE LAVA CAKES


Ingredients


  • ▪️1 cup almond flour
  • ▪️1/8 cup vital wheat gluten (substitute collegen powder for gluten free)
  • ▪️1 tsp baking powder
  • ▪️1/2 tsp baking soda
  • ▪️1/2 cup stevia
  • ▪️1/8 cup erythritol
  • ▪️2 eggs
  • ▪️1 tsp vanilla
  • ▪️1 tsp instant coffee
  • ▪️1/2 cup butter
  • ▪️1/2 cup water
  • ▪️1/4 cup sour cream
  • ▪️1/4 cup cocoa
  • ▪️4 1/2 oz lilys dark chocolate
  • ▪️3/4 cup heavy cream
  • ▪️6 tsp cocoa

Instructions

  1. ▪️In a large bowl with together almond flour, vital wheat gluten, baking powder and baking soda. Set aside
  2. ▪️In a separate bowl with together eggs, stevia, erythritol, and sour cream. Set aside.
  3. ▪️In a small sauce pan melt the butter. Wisk in the water and 1/4 cup cocoa powder once it is complete melted.
  4. ▪️Add the chocolate mixture to the egg mixture. Once mixed combine fully with dry ingredients.
  5. ▪️Divide batter between 6 well greased mini bunt molds and bake at 350° for 24 minutes.
  6. ▪️Once bundt cakes are cool to the touch prepare your chocolate filling. Heat heavy cream in a sauce pan until it begins to bubble. Turn off heat and add dark chocolate stirring until fully combined.
  7. ▪️Arrange bundt cakes flat side down on plates. Spoon the filling mixture into the center of each cake until it slightly overflows.
  8. ▪️Sift the remaining 6 top of cocoa powder on the tops of the cakes and serve.
