The last time I made pancakes, I made two batches and froze one of them to save for another time. This was that time.

How to make a Keto Low-Carb Cinnamon Roll Pancakes



Ingredients:

PANCAKES⁣


  • ° 2oz Cream Cheese (microwave 30 seconds)⁣⁣
  • ° 2 eggs (Room Temperature)⁣⁣
  • ° 3/8 Cup Almond Flour (I used PamelasProducts)⁣⁣
  • ° 1 tsp Baking Powder⁣⁣
  • ° 1 Tbsp Confectioners Swervesweetie⁣
  • ° 1/2 tsp Vanilla Extract⁣⁣
  • ° Dash of Cinnamon⁣⁣


CINNAMON SWIRL⁣


  • ° 2 Tbsp Butter⁣
  • ° 2 tsp Cinnamon ⁣
  • ° 2 tsp Confectioners Swerve⁣


GLAZE⁣


  • ° 2 Tbsp Butter⁣
  • ° 2 Tbsp Cream Cheese⁣
  • ° 1/2 tsp Vanilla Extract⁣
  • ° 3 tsp Confectioners Swerve Sugar⁣


° Sugar-Free Syrup⁣

Instructions:


  1. • Put all ingredients on the pancakes list up until Cinnamon into the blender for 45 seconds - 1 minute⁣⁣
  2. • Let batch sit for 10 minutes before cooking⁣⁣
  3. • In a small bowl, add butter, cinnamon, and Swerve and microwave for 15 - 20 seconds. Mix well⁣
  4. • Heat up pan or Dash skillet (use Dash for more mini pancakes!)⁣
  5. • Add an even layer of batter into your pan/Dash. Using a teaspoon, take your cinnamon swirl mixture and swirl it in on top of the pancake batter. Close the skillet top and cook for 5 minutes. Repeat for additional pancakes⁣
  6. • Meanwhile, in a small bowl for the glaze, add butter and cream cheese and microwave for 20 seconds. Whisk in the vanilla extract and Swerve. Rub the glaze on top of each pancake and it is ready to serve!⁣
  7. • Add an extra dash of cinnamon and powdered Swerve on top. Serve with sugar-free syrup (optional) and enjoy!⁣
