Zucchini season is upon us, so roll up your sleeves and get ready to make some ketogenic goodness with one of my favorite veggies! It’s so versatile I think it has the potential to slowly catch up to cauliflower. Maybe not, I’m lying, but nonetheless, it’s a gem to cook with!


HOW TO MAKE A KETO ZUCCHINI CHEDDAR FRITTERS 


INGREDIENTS:


  • 550g zucchini, shredded
  • 150g cheddar, shredded
  • 3 eggs
  • 40g coconut flour
  • 1 tbsp garlic powder
  • Salt 
  •  pepper to taste


INSTRUCTIONS:


  1. Sprinkle some salt on shredded zucchini and let it stand for about 10 minutes. Then, wring out all the water using a cloth. Make sure your zucchini is very dry.
  2.  Add eggs, cheddar, coconut flour, garlic powder, a little bit of salt and pepper.
  3.  Cook on a non-stick skillet in small batches, 3-4 minutes per side on medium-low heat using a minimal amount of olive oil to coat the pan.



Recipe makes 10 zucchini fritters
