Mocha cheesecake bites for a keto friendly summer travel treat at 1.6 total carbs per piece.
My mistake of not having almond flour worked out perfectly!
 These came out super low carb & super delicious.

1 piece based on MY ingredients = 107Calories, 1.6 Carbs, 0.1 Fiber, 2.9 Protein and 10g fat.


How to make a Keto-Friendly Mocha Cheesecake 


INGREDIENTS:


  • 7 oz Philadelphia cream cheese. (Next time I’ll use whole package but I used 1oz on something else that day!).
  • 1/4 cup Organic Valley Sour Cream.
  • 1 whole pasture organic egg.
  • 1 pasture organic egg yolk.
  • 2 Tbsp Medaglia D’oro instant espresso.
  • 1 Tbsp Viva naturals Raw organic Cacao Powder.
  • 1/4 cup Swerve Granular.
  • 1 Tsp vanilla extract.



INSTRUCTIONS:

Pre-heat oven to 350F.
1 bring cream cheese to room temp. (Leave on counter for an hour or so until soft to touch).
2 Cream the cheese with swerve.
3 add eggs and rest ingredients and mix until combined. (I used my kitchen aid on 2).
4 pour into either silicone muffin molds or in muffin liners.
5 Add about half an inch of water into a baking pan, place muffin molds inside the pan and bake for about 30min. They’re done when a toothpick inserted in the center comes out clean.
6 cool completely then freeze.

Take out 5-10min before consuming if you want a cold frozen treat. Or 15-30min if you want them softer.

I’m putting them in my 24h freezer bag and bringing on the plane tomorrow for a treat during our layover!
