 No-Bake Oreo Cheesecake


So excited to share yet another super delicious recipe using  Oreo Cookie Crumbs!! This quick and easy cheesecake is no-bake so it's ready in no time and it features sweetening power from the brand new Keto-Certified Monk Fruit In The Raw Zero Calorie Sweetener.

I've been having such a blast coming up with (and eating) new yummy recipes during this quarantine!  Cooking is my happy place so it's really been something I've done a lot of well-staying safe at home!

This recipe makes a 6-inch cheesecake that can be cut into 4 hearty servings or can easily be doubled to make a large 12-inch cheesecake.


How to make a keto No Bake Oreo Cheesecake

Ingredients:

For The Crust:

  • 3/4 cup Oreo Cookie Crumbs(recipe below) 
  • 2 tablespoons melted butter


Stir together and press into the bottom and sides of a 6-inch pie plate then place in the freezer while you make the filling.

For The Filling:


  • 2 oz heavy cream
  • 1/8 teaspoon (about 1/2 packet) Keto-Certified Monk Fruit In The Raw Zero Calorie Sweetener (InTheRaw)
  • Pinch of pink salt


Whip to soft peaks and set aside.


Instructions:


  • In a separate bowl, beat together:
  • 4 oz cream cheese, softened
  • 1 tablespoon sour cream
  • 2 teaspoons (about 12 packets) Keto-Certified Monk Fruit In The Raw Zero Calorie Sweetener (InTheRaw)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon lemon juice
  • Pinch of pink salt


Gently fold whipped cream into cream cheese mixture until combined and spread into prepared oreo crust. Sprinkle with additional Oreo crumbs if desired and refrigerate uncovered for at least 1 hour before serving. Cover with plastic wrap after 1 hour.


Oreo Cookie Crumbs

1/2 cup Pork King Good unseasoned crumbs
2 tablespoons black cocoa powder
2 tablespoons Pyure organic stevia blend
.
Mix all ingredients and SMOOSH with the back of a fork until everything is completely combined into one harmonious mixture, about 3-5 minutes. Enjoy in all of the most amazing ways you can think of!

Such as:
- Simply eating with a spoon
- Stirring into fresh whipped cream
- Sprinkling on top of ice cream

📌 TIPS:
.
* HIGHLY recommend using Pyure organic stevia blend as it seems to cover any porky flavor. I tried with just erythritol and while they were still edible, they are nowhere near as good. I have yet to try with monkfruit or allulose.

* You MUST use BLACK COCOA POWDER, regular cocoa powder with result in chocolate cookie crumbs, NOT oreo cookie crumbs. The black cocoa is imperative for the oreo flavor. I recommend Wincrest brand available on Amazon.

* These MUST be smooshed (technical term 🤣) together with the back of a fork to achieve the proper consistency and flavor
