How to make a Keto Peanut butter Jelly Cups 



INGREDIENTS


  • 100g sugar free dark chocolate
  • 100g sugar free milk chocolate (I use Cleaneating.se)
  • 1/4 cup (0,6 dl) mixed nuts, I use Brasilian nuts, hazelnuts, almonds and pecans.
  • 12 tbsp peanut butter

JAM:


  • 1 cup (2 dl) frozen raspberries
  • 1 tbsp erythritol



INSTRUCTIONS:
1. Add raspberries and erythritol to a saucepan. Heat up and let simmer for a few minutes until it becomes a jam. Can also be heated together in the microwave. Set aside and let cool.
2. Melt the chocolate together in the microwave.
3. Cover the bottom and sides of mini cupcake forms with some of the melted chocolate. I take a tsp and pour in the bottom and turn it to the side and roll the form around so the chocolate covers the edges.
4. Put them in freezer for 2 min. Take out and fill them with about a tbsp of peanutbutter and a tsp of raspberry jam. Place in the freezer for a few minutes.
5. Chop the nuts fine and add to the rest of the chocolate. Take out the cups from freezer and top them with the nut chocolate and store in the freezer.

Recipe makes 12 cups
