I love a perfect casserole. With some time in the oven, you get dinner for a crowd and some leftovers too! And there is something that is always so comforting and homey about casserole. This keto-friendly creamy spinach artichoke chicken casserole is definitely comforting because it’s super cheesy and creamy. But, it also sneaks in a big dose of vegetables too.


Unfortunately, I didn't measure but this is a quick concoction of:

Ingredients


  • 2 lbs shredded chicken
  • 1 can Artichoke hearts
  • 1 pack Mushrooms
  • 16 oz Spinach (fresh if possible)
  • 1 cup mayo
  • 8 oz cream cheese
  • 2 cup shredded Parmesan
  • 2 cup shredded mozzarella
  • Season to taste (garlic, S & P)


Instructions:

Mix all ingredients reserving 1 cup of cheese each for topping. 
Cook at 350 for about 20 minutes in a greased 9x13. 
Broil for crispy cheese.
