Are you doing Keto but miss waffles? Here is the most delicious and fluffiest Keto Waffles Recipe ever that is sure to impress the entire family.
I use Isopurecompany. To my surprise, it has a great texture with protein powder.


How to make a Keto Blueberry waffles

Ingredients


  • ⅔ cup almond flour
  • 1 scoop unflavored protein powder Isopurecompany
  • 1 teaspoon baking powder
  • ⅛ teaspoon salt
  • 1 tbsp sweetener
  • 2 tablespoon butter
  • 2 large egg
  • ¼ cup heavy cream
  • 1 tsp vanilla extract



Topping:

Keto Blueberry Compote
Whipped cream or dairy-free yogurt

For making keto blueberry compote 

• 1-pint blueberries (about 12 ounces), rinsed 
• 2 tablespoons granular erythritol 
• 3 tablespoons water 
• 1 tbsp lemon juice 


1. In a small saucepan, add the blueberries, erythritol, lemon juice, water. Bring to a low boil over medium heat, stirring consistently. 
2. Reduce heat to low and let simmer until reduced to desired consistency, at least 10 minutes. Use a fork, wooden spoon, or masher to break up the berries until desired consistency. 
3. Store in the refrigerator up to 2 weeks in an airtight container.

Instructions

Preheat a waffle iron and coat with cooking spray. 
In a medium bowl, mix together the protein powder, almond flour, baking powder, and Sweetener.
Add the eggs, cream, and vanilla extract to the dry mixture; stir until thoroughly combined and batter forms. ( you can use a blender too)
Place ¼ cup batter into each well of the waffle iron. and cook according to your waffle iron's directions.
Serve immediately, topped with your favorite toppings and syrup.
My toppings are whipped cream and blueberry compote
mixed with fresh blueberries.
