Easy Keto Butter cookies!  They’re so simple with a few ingredients (which you probably already have).
 These beauties are so simple, and taste like childhood - they are just like the real thing. It’s one of my favorites recipes.



How to make this easy Keto Butter cookies

Ingredients

Makes 14 cookies
  • 1 cup soft butter
  • 1/2 cup powdered erythritol
  • 1 egg, room temp
  • 2 2/3 cups almond flour
  • 2 tsp vanilla extract.


Options... try almond extract




Instructions


  1. Preheat oven 350F
  2. Line a cookie sheet with a silicone mat ( or parchment paper)
  3. Mix the erythritol and butter together, then add the egg. Mix well. 
  4. Finally, add the almond flour & vanilla and mix until smooth.

Swirl method
place the dough in your icing bag with a large star nozzle. Push the dough to the tip before you begin. Push out the cookie dough in a circular motion creating the swirl.

For regular cookies, roll even sized balls, flatten down a little, and use a fork to create a pattern on the top.Bake for 10-12 minutes, leave to cool. Serve and enjoy.

NOTE: 
keeps best in the fridge

OPTIONAL I melted a bar of chocolate and dipped the cooled cookies so that the bottom was chocolatey... it’s easier to do this if they’ve been in the fridge a while.
