Coconut cones are South African Indian Diwali/tea time/coffee time pastry/cookie treat. My Indian friend is simply the best and I have been wanting to eat it for a while now... of course Cutdacarb to the rescue to make all my keto dreams come true.

All you need

Ingredients: 


  • 2 two sheets of (Cutdacarb) flatbread. 
  • (Natures.hollow) apricot jam and desiccated coconut (Indian store or amazon) 
  • little extra sweetener.

Instructions:

Brush (Kerrygoldusa) butter on an entire flatbread lightly but thoroughly making sure to get all corners.
Place another sheet of flatbread on top. Making sure the edges meet as evenly as possible.

Fold the flatbread in half lengthwise.

Using a pizza cutter, cut out 4 double-layered (isosceles or equilateral) triangles.

Making sure your triangles stay “doubled” (the butter will ensure it sticks together) and turn over one side - brush more butter and turn over so the buttered side is on your foil.
Repeat with remaining doubled triangles.
Then place 1 tsp of (Natures.hollow) apricot jam and spread out as shown.
Sprinkle with a little extra sweetener (I used Bochasweet)
Sprinkle desiccated coconut over the jam and sweetener
Then roll your triangle tightly as shown from the widest part of one side of the triangle to the tip.

Place fold side down and sprinkle with more desiccated coconut.
Bake at 375F for 30 min until browned and crisped.

You can thank me later... but if you’re missing a little pastry like something in your life that’s slightly sweet, crunchy, and yet soft in all the right places - this is it.
