Give your bacon and eggs a break and try these easy keto Lemon Poppyseeds Muffins! Bright and fresh, these keto lemon poppyseed muffins have everything you need to start your day. And at only 2 net carbs, you can even have two! These delightful bites are the perfect summer treats.



Ingredients


  • 1 Tbsp/ 14g Melted Butter
  • 2 medium eggs
  • ½ tsp / 2g Vanilla Extract
  • ¼ tsp / 1g Lemon Extract (Optional)
  • 2 Tbsp/ 3og Lemon Juice
  • 1 tsp/ 2g Lemon Zest
  • 3 Tbsp/ 45g Unsweetened Vanilla Almond Milk
  • Just less than 1 cup/ 100g Almond Flour
  • 1 tsp / 5g Baking Powder
  • ½ tsp / 1g Poppy Seeds
  • 4 heaping Tbsp/ 40g Low Carb Sweetener (I use Monk Fruit by Amsonnaturals )



Instructions

Preheat oven to 350 degrees

Combine wet and dry ingredients and mix well

Prepare a 6 cup muffin pan with liners or butter and pour the mixture into it evenly.


Bake for 15 minutes or until the tops are lightly golden.
