These Spinach Pinwheels are a great low carb and gluten-free appetizer or snack. 
If you missed my post yesterday (Spinach Feta Cheese Bread), I’ve decided to do an ingredient of the week, and this week, it’s spinach. I’m trying to do some “think outside the box” recipes with these ingredients. My main purpose is to get my creative brain flowing again, but also to make your grocery list more cost-effective. Buy something once, use it all week.

Let's Make Our Keto Low-Carb  Spinach Pinwheels

Ingredients

For the dough: ⁣

  • 1 1/2 cups of shredded mozzarella⁣
  • 3/4 Cup of almond flour
  • 2 TBSP of cream cheese⁣
  • 1 egg⁣
  • Garlic Powder, onion powder, Italian seasoning, or any other desired seasonings ⁣

•Put mozzarella and cream cheese in a medium-sized bowl and microwave for 1 minute. Stir, then microwave another 30 seconds until the cheeses are melted. ⁣
•Add in egg, almond flour, and seasonings. Wet your hands and mix everything together until well combined. If the dough is sticky, simply wet your hands and continue kneading together. ⁣

•Form the dough into a ball on a baking sheet lined with parchment paper.⁣

•Roll the dough out to form a rectangle, about 1/3 inch thickness. Set aside. ⁣

For the filling: ⁣

  • 3 cups fresh spinach⁣
  • 6 ounces cream cheese ⁣
  • 1 teaspoon garlic powder ⁣
  • 1 extra cup spinach ⁣
  • 1/2 cup shredded mozzarella cheese ⁣

Instructions:⁣

• In a large skillet, drizzle some olive oil to coat the pan and add the spinach. Cook until it wilts down. ⁣

• Add in the cream cheese and garlic powder and heat until melted. ⁣
-Spread the spinach mixture on top of the dough in an even layer. Top with the extra fresh spinach and mozzarella cheese. ⁣

-Slowly roll the dough up into a log. Cut the log into strips about an inch wide. ⁣

-Place the pinwheels on a baking sheet lined with parchment paper and bake for 15-18 minutes at 420°. ⁣

*I ended up using a mixture of cooked spinach and fresh spinach to see which texture I preferred. 
I loved both, so that’s why there’s a mix. ⁣
*This would also be amazing with feta instead of the mozzarella topping. ⁣
I hope you try these out. They were absolutely amazing!

Carbs will depend on which brands of ingredients you use.
