KETO SAVORY HEIRLOOM TOMATO CUSTARD TART

(Serves 8)

Ingredients:

Crust:

  • 200g almond flour 
  • 50g butter 
  • 1 egg
  • 1 tsp dried oregano (McCormick)
  • Salt + pepper to taste


Filling:

  • 100g Gruyere cheese, shredded
  • 200ml heavy cream
  • 2 scoops collagen, unflavored at (BulletProof)
  • 2 eggs
  • 200g heirloom tomato, sliced
  • 100g onions, sliced
  • 2 tbsp butter 
  • Salt + pepper to taste


Instructions:

Preheat oven to 350F/180C. 
Mix all ingredients for the crust until combined. Form into a ball. Freeze for 30 minutes. Then, roll out onto a silicone tart pan. 

Bake for 15-18 minutes (don’t get the edges too brown as you will bake it again). 
Cool down. In the meantime, carmelize onions in 2 tbsp of butter. 

Set aside. Beat together Gruyère, heavy cream, eggs, collagen, salt, and pepper. 
Pour into the tart. Bake for 10 minutes. Place tomatoes and onions on top. 
Bake for another 10-15 minutes.
