These easy keto low carb pumpkin spice pancakes are the most delicious keto fall breakfast with a moist, slightly sweet texture and only 2.7g of net carbs!

keto pumpkin pancakes recipe (2 servings).
I ate it all. Since I only do 2 meals.
Ingredients
- 2 eggs.
- 3 TBSP good_culture plain cottage cheese.
- 4 TBSP Farmers Market Pumpkin purée.
- 3 TBSP Nature Eats Almond Flour.
- 2 TSP Arrowhead Coconut Flour.
- 1/2 TSP Bob’s Red Mill Baking Powder.
- 1/2 Tsp pumpkin spice mix.
- 1/8 Tsp vanilla extract.
Instructions:
Blend everything together.
Lightly grease pan on medium heat. I use a paper towel ball and dip it in some coconut oil and lightly spread it on the pan (after each round of pancakes). You’ll know they’re ready to flip when a slight “skin” forms on top.
Served with @choczero Maple syrup for just 1 extra carb!
