Crunchy and cheesy recipe. Since I'm sharing some of my favorite recipes of the year, how could I not share my Low Carb Fried Ravioli! These are an absolute favorite in my house!

LOW CARB FRIED RAVIOLI RECIPE


(makes 18)

INGREDIENTS

  • 3 Cut Da Carb Flat Bread Wraps
  • 1/2 cup full-fat ricotta cheese
  • 1/2 cup mozzarella cheese
  • 2 ounces of cream cheese (softened)
  • 2 tablespoons parmesan cheese
  • Egg
  • Oil for frying
  • Your favorite low carb pasta or pizza sauce for dipping

Optional: 
Extra parmesan cheese and/of freshly chopped parsley for garnish.



INSTRUCTIONS

If you are using a deep fryer heat to 325° F

In a small bowl beat the egg for egg wash and set aside.

In a medium bowl mix all the cheese until thoroughly combined. Set aside.

Next cut your Cut Da Carb Flatbreads into 36 squares. Each square is approximately 3”.

To assemble: 
Take 2 squares and brush with beaten egg, take approximately 1 tablespoon of cheese filling and place in the center of one square, top the cheese-filled square with second square (egg wash side down), brush the top of ravioli with egg wash, using a fork very carefully press down edges of ravioli with fork tines, set aside and continue until all the ravioli are made.

If you are using a deep fryer begin adding the ravioli making sure not to overcrowd. You may need to batch cook and cook for approximately 3 minutes. I did turn over once.
If you are using a pan, it's pretty much the same procedure. Heat about an inch or so of oil over medium heat (325° F) once heated add the ravioli, cook for approximately 3 minutes or so turning over halfway through.

Once cooked remove and place on a paper towel-lined plate or sheet to absorb extra grease. Optional to garnish with extra parmesan cheese and freshly chopped parsley.

Serve with your favorite warmed pasta or pizza sauce and...ENJOY!

NOTE: 
I actually made my ravioli ahead of time, placed on a tray, wrapped in plastic wrap, and fried them later in the evening. So these can be made ahead of time. 
As well, I'm going to test reheating them in the oven, and cooking from frozen, so I'll do an update later.
