One of my favorite things about this Spinach and Olive Focaccia is that it doesn't skimp on the spinach. Simply, you can get a full serving of spinach with a few slices of this bread.


  • 8 eggs (proteins separated from yolks)
  • 200g of fresh spinach
  • 150 g grated mozzarella or other cheese
  • 60 ml of olive oil
  • 7 g baking powder
  • 120 g of almond flour
  • 30 g of coconut flour
  • Spices and additives as desired.
  • I gave Provencal herb

Beat the egg whites until stiff.
Blend spinach with oil until smooth.
In the second bowl, combine the remaining ingredients.
In three batches, add them to the proteins and mix them with a spatula.
Pour the mass into a mold (in my case, an ordinary pan).
We put whatever we want on top, I gave two kinds of olives, tomatoes, and ricotta cheese.
Bake at 180 degrees for about 45 minutes.
