Yes, you can still have a delicious Grilled Reuben Sandwich and stay low carb! Here's my Low Carb Reuben Sandwich, on a Kinda-Rye Chaffle, Oooozing with melted Swiss Cheese.

 My Low Carb Thousand Island Dressing, and finished with a bit of Sauerkraut that's been grilled in butter! Be still my heart!



RYE-LIKE CHAFFLES

INGREDIENTS:

  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup shredded Swiss cheese (or use another 1/4 cup mozzarella cheese)
  • 1 egg beaten
  • 1/4 teaspoon ground fennel seeds
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • 1/2 teaspoon Dijon mustard (optional)
  • Whole fennel seeds (optional)

INSTRUCTIONS:

Preheat your waffle maker I use a Dash mini.

While your waffle maker is heating mix all ingredients, except for the whole fennel seeds in a bowl until well combined.

Once your waffle maker is heated add 1/2 the Chaffle batter, and sprinkle with fennel seeds, and cook until done.

Repeat with the remaining batter.

Now you have two delicious Rye-like Chaffles to use for low-carb corned beef and Reuben sandwiches. ENJOY!

LOW CARB THOUSAND ISLAND DRESSING


INGREDIENTS

  • 1 cup mayonnaise
  • 3 tablespoons sugar-free ketchup (I use G. Hughes) 
  • 3 tablespoons chopped dill pickles or sugar-free pickle relish
  • 1 tablespoon white distilled vinegar
  • 1-2 teaspoons pickle juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon sugar-free sweetener (I used powdered Swerve)


INSTRUCTIONS

Add all of the ingredients to a small bowl and whisk well to combine.

Taste and add additional salt or sweetener as desired.

Store in a tightly-closed container in the refrigerator for up to 2 weeks.

it's really going to depend on how you make it. 
The ingredients you use and how much of each you use. Here’s the breakdown of net carbs that I have...chaffle recipe approx. 2.3 g net carbs, 1000 island approx. 0.2g net carbs, corned beef most have about 1 net carb per 4 ounces, Swiss cheese generally 0.5 g, sauerkraut approx. 2.3 g net carbs.
